Major Crops, One by One

This section covers each major crop's ideal soil and climate, its leading producing states (approximate recent-year ranking — always cross-check the latest Agriculture Ministry Advance Estimates before an exam), and one distinguishing fact worth attaching to the name.

Rice (Paddy)

Rice needs high temperature (above 25°C), high humidity, and abundant water (100 cm+ rainfall, or assured irrigation where rainfall is lower) — it is grown standing in flooded fields for most of its growing period, which is why the Ganga delta, coastal deltas, and heavily irrigated Punjab plains are its classic homes even though Punjab itself is a low-rainfall state (it grows rice almost entirely on canal and tubewell irrigation, not natural rainfall). Alluvial soil is ideal.

Leading states (approx.): West Bengal, Uttar Pradesh, Punjab, Telangana, Andhra Pradesh, Odisha, Tamil Nadu, Bihar, Chhattisgarh, Assam — West Bengal has led national output for several years running, though Punjab has the highest yield per hectare (productivity) of any major rice state because of near-total irrigation and HYV seed adoption.

Distinguishing fact: India is the world's largest exporter of rice (basmati and non-basmati combined) and typically the world's second-largest producer after China; the basmati variety, grown almost exclusively in the Indo-Gangetic belt of Punjab, Haryana, and western UP under a Geographical Indication (GI) tag, commands a large export premium distinct from ordinary rice.

Wheat

Wheat needs a cool growing season (10–15°C) followed by warm, dry weather at ripening/harvest time, with moderate rainfall (50–75 cm) or irrigation — this is why it is fundamentally a Rabi crop of the north Indian plains, sown after the monsoon retreats and harvested before the summer heat peaks. Alluvial soil is ideal; loamy black soil in Maharashtra/MP also supports it under irrigation.

Leading states (approx.): Uttar Pradesh (largest producer by a wide margin), Madhya Pradesh, Punjab, Haryana, Rajasthan — Punjab and Haryana together have the highest per-hectare yield due to near-universal irrigation and being the historical epicentre of Green Revolution HYV adoption.

Distinguishing fact: India is typically the world's second-largest wheat producer (after China); the Sonalika and Kalyan Sona varieties were among the first high-yielding wheat varieties widely adopted during the Green Revolution of the 1960s.

Maize

Maize is a versatile crop, grown as a Kharif crop across most of India but increasingly also as a Rabi crop in some southern/peninsular states with irrigation; it needs moderate rainfall (50–75 cm), warm temperature, and well-drained soil, tolerating a wider range of soil types (alluvial, red, and black) than rice or wheat.

Leading states (approx.): Karnataka, Madhya Pradesh, Maharashtra, Bihar, Uttar Pradesh — maize cultivation has grown fastest in the south (Karnataka, Andhra Pradesh, Telangana) in recent decades, driven substantially by demand from the poultry-feed industry rather than direct human consumption.

Distinguishing fact: Maize is the crop most closely tied to the poultry and starch industries in India today, and its area has expanded sharply even in traditionally rice/wheat states as farmers diversify (see the Green Revolution section's discussion of crop diversification).

Jowar, Bajra, and Millets

Jowar (sorghum) and bajra (pearl millet) are the two major "coarse cereals" of the semi-arid tracts, both highly drought-tolerant and suited to low-rainfall regions on red, black, or even sandy soil where rice and wheat cannot survive without heavy irrigation. Jowar is grown as both a Kharif and Rabi crop in parts of the Deccan (a distinctive dual-season pattern); bajra is almost exclusively Kharif and tolerates the poorest, sandiest soils of any major foodgrain, making it the characteristic crop of Rajasthan's semi-arid fringe.

Leading states — Jowar (approx.): Maharashtra, Karnataka, Madhya Pradesh, Rajasthan. Leading states — Bajra (approx.): Rajasthan, Uttar Pradesh, Haryana, Gujarat, Maharashtra.

Millets more broadly (jowar, bajra, ragi/finger millet, and the "minor millets" — kodo, kutki, foxtail, little millet, barnyard millet) were the subject of a major recent policy and diplomatic push: the United Nations, on India's initiative, declared 2023 the International Year of Millets, part of a broader government effort (branding millets as "Shree Anna") to promote their nutritional and climate-resilience advantages over water-intensive rice and wheat.

Distinguishing fact: India is the world's largest producer of millets overall and of bajra specifically; ragi (finger millet), concentrated in Karnataka, is the crop most associated with Karnataka's own food culture (ragi mudde/ragi ball).

Pulses

India is both the world's largest producer and the world's largest consumer of pulses, yet still imports a share of its domestic requirement in most years — a persistent supply gap that makes pulses a recurring policy and exam topic. The major pulses are tur/arhar (pigeon pea), moong (green gram), urad (black gram) — all primarily Kharif crops — and gram/chana (chickpea) and masur (lentil) — primarily Rabi crops. Pulses are legumes and fix atmospheric nitrogen in the soil via root-nodule bacteria (rhizobium), which is why they are agronomically valuable in rotation with cereals even beyond their direct food value, and why they tolerate poorer, less-irrigated soil than rice or wheat.

Leading states (approx., pulses overall): Madhya Pradesh (largest producer overall, especially gram), Rajasthan, Maharashtra, Uttar Pradesh, Karnataka.

Distinguishing fact: Madhya Pradesh alone accounts for the largest single share of India's gram (chickpea) output, making it the closest thing to a single-state answer whenever a question asks "India's largest pulse-producing state."

Sugarcane

Sugarcane needs high temperature (21–27°C), high rainfall or assured irrigation (75–150 cm equivalent), and fertile, deep soil (alluvial or well-irrigated black soil) — it is a long-duration crop (10–18 months depending on variety and region) that occupies the land across both Kharif and Rabi seasons, which is why it's sometimes classed separately as a "cash crop" outside the strict three-season framework.

Leading states (approx.): Uttar Pradesh (largest producer by cane tonnage), Maharashtra (highest sugar recovery/output efficiency and a major sugar-producing state), Karnataka, Tamil Nadu, Bihar.

Distinguishing fact: India is the world's second-largest producer of sugarcane and sugar (after Brazil in cane terms), and is also a major producer of ethanol blended into petrol via the government's Ethanol Blending Programme, which draws heavily on sugarcane molasses/juice as feedstock.

Cotton

Cotton is the classic black-soil (regur) crop, needing high temperature, moderate rainfall (50–100 cm, though it also grows well under irrigation in lower-rainfall tracts), a long frost-free growing period, and — critically — bright sunshine at the picking/maturation stage; black soil's moisture retention is exactly what lets cotton survive dry spells during its growth without failing.

Leading states (approx.): Gujarat (largest producer for many recent years), Maharashtra, Telangana, Rajasthan, Karnataka, Madhya Pradesh, Andhra Pradesh.

Distinguishing fact: India is the world's largest cotton producer (by area under cultivation, though not always by raw output tonnage, since yields per hectare remain lower than competitors like China or the US) and has the world's largest area under Bt cotton (genetically modified, pest-resistant) cultivation.

Jute

Jute needs high temperature, high humidity, and heavy rainfall (150 cm+), plus fresh alluvial soil renewed by annual flooding — conditions met almost uniquely well by the Ganga-Brahmaputra delta, which is why jute cultivation is geographically the most concentrated of any major Indian crop.

Leading states (approx.): West Bengal (overwhelmingly dominant — the large majority of national output), Bihar, Assam, Odisha.

Distinguishing fact: India is the world's largest producer of jute, and West Bengal alone (particularly the Hooghly river's industrial belt around Kolkata) is also home to the great majority of the country's jute-processing (mill) capacity, making the crop and its processing industry geographically almost identical — a rare case in Indian agriculture.

Tea

Tea is a plantation crop needing well-drained, slightly acidic soil (ideally laterite or hill loam), abundant and well-distributed rainfall (150–250 cm), warm humid climate, and — distinctively among major Indian crops — hill slopes for natural drainage, since tea roots cannot tolerate waterlogging.

Leading states (approx.): Assam (the largest producer by a wide margin, concentrated in the Brahmaputra valley), West Bengal (Darjeeling and the Dooars/Terai), Tamil Nadu (Nilgiris), Kerala.

Distinguishing fact: Darjeeling tea carries India's first-ever Geographical Indication (GI) tag (registered 2004), and Assam alone produces roughly half of India's total tea output, making it the single most tea-dominant state in the country by far.

Coffee

Coffee needs a warm, humid tropical climate but grown ideally on hill slopes at moderate elevation, under a partial forest-shade canopy (unlike tea, which is typically grown in open sun), on well-drained, rich hill soil — conditions concentrated almost entirely in the Western Ghats.

Leading states (approx.): Karnataka (the overwhelming leader — the large majority of national output, centred on Kodagu/Coorg and Chikmagalur), Kerala, Tamil Nadu.

Distinguishing fact: Karnataka alone accounts for the large majority of India's coffee production, and India grows both Arabica (higher quality, more climate-sensitive) and Robusta (hardier, higher-yielding) varieties, with Robusta dominant by volume.

Rubber

Rubber (natural/para rubber) needs a hot and consistently humid equatorial-type climate (annual rainfall over 200 cm, temperature above 25°C, with no pronounced dry season) and does best on laterite soil — a very narrow climatic tolerance that confines its cultivation in India almost entirely to Kerala.

Leading states (approx.): Kerala (overwhelmingly dominant — the vast majority of national output, concentrated in Kottayam and neighbouring districts), Tamil Nadu, Tripura and other Northeastern states (a smaller but growing share).

Distinguishing fact: Kerala alone produces the large majority of India's natural rubber, and the Rubber Board (headquartered in Kottayam) has actively promoted expansion into the Northeast (particularly Tripura) as a strategic diversification since Kerala's own suitable land is nearly saturated.

Oilseeds

India's major oilseeds are groundnut, mustard/rapeseed, soybean, and sunflower, each with distinct climate niches. Groundnut needs a warm climate, light well-drained (often sandy loam or red/black) soil, and moderate rainfall, thriving in the semi-arid tracts of Gujarat and Andhra Pradesh. Mustard is a Rabi crop needing a cool, dry winter, grown extensively across Rajasthan and Haryana's alluvial and semi-arid tracts. Soybean, a relatively recent and fast-growing crop in Indian agriculture, favours the black soil tracts of Madhya Pradesh and Maharashtra as a Kharif crop, and its rapid area expansion since the 1970s is itself a notable case of crop diversification. Sunflower is more scattered geographically, with Karnataka historically prominent.

Leading states — Groundnut (approx.): Gujarat, Rajasthan, Tamil Nadu, Andhra Pradesh. Leading states — Mustard/Rapeseed (approx.): Rajasthan (dominant), Haryana, Madhya Pradesh, Uttar Pradesh, West Bengal. Leading states — Soybean (approx.): Madhya Pradesh (long-time dominant producer), Maharashtra, Rajasthan.

Distinguishing fact: Despite being among the world's largest oilseed producers overall, India remains heavily dependent on imported edible oil (particularly palm oil) to meet domestic consumption — a long-standing structural gap that the National Mission on Edible Oils (including a dedicated push on oil palm) specifically targets.

Fertiliser Use — The Crop Section's Companion Statistic

Fertiliser consumption patterns track the Green Revolution's geography almost exactly, which is why this fact belongs alongside the crop tables rather than in a separate chapter of its own. India's fertiliser use is conventionally measured through the N:P:K ratio (Nitrogen : Phosphorus : Potassium, the three primary plant nutrients supplied by chemical fertiliser), and the ideal balanced ratio recommended by agronomists is roughly 4:2:1 — but actual on-ground consumption in the intensive rice-wheat belt has historically skewed far more nitrogen-heavy than this ideal, a direct consequence of urea's much lower subsidised retail price relative to phosphatic and potassic fertilisers. This nitrogen-skew is one of the most concrete, measurable expressions of the "soil degradation" criticism of the Green Revolution discussed later in this book — over-application of nitrogen without balancing phosphorus and potassium depletes micronutrients and organic matter over time even while sustaining short-term yield. Punjab, Haryana, and Andhra Pradesh/Telangana are consistently among the highest per-hectare fertiliser consumers in the country, again mapping almost exactly onto the assured-irrigation, HYV-intensive belts already covered in the soil and crop sections above.

Memory hook: "4:2:1 is the ideal, but urea's cheap price tips the scale toward nitrogen" — the balanced N:P:K ratio agronomists recommend, versus the nitrogen-heavy reality that tracks the Green Revolution belt.

Spices

India is often called the "land of spices" and is both the world's largest producer and the world's largest exporter of spices taken as a category, spanning an enormous range of individual crops each with its own micro-climate niche — black pepper (Kerala's Western Ghats, needing hot humid shade), cardamom ("queen of spices," Kerala's high-range Idukki district and parts of Karnataka/Tamil Nadu, needing cool hill climate and shade), chilli (Andhra Pradesh/Telangana as the largest producers, needing warm climate and moderate rainfall), turmeric (concentrated in Telangana, Maharashtra, and Karnataka, needing warm humid climate and well-drained loamy soil), and ginger (grown widely across hill states including Kerala, Meghalaya, and Sikkim).

Leading states (approx., spices overall): Madhya Pradesh and Rajasthan (largely from garlic and coriander volumes), Gujarat, and — for the classic "traditional spices" (pepper, cardamom) — Kerala remains the historic and symbolic centre even where it is no longer the single largest producer by raw tonnage across every spice.

Distinguishing fact: Kerala's Malabar coast was the original destination that drew European trading powers (Portuguese, Dutch, British) to India from the 15th century onward specifically for black pepper — making Kerala's spice trade arguably the single most historically consequential agricultural fact in this entire book.

Other Notable Cash and Horticultural Crops

Beyond the crops above, a handful of others recur often enough in exam questions to deserve a one-line entry each. Potato, a temperate-origin crop grown in India mainly as a Rabi crop (an unusual case of a "vegetable" being treated almost like a staple foodgrain in production statistics), is overwhelmingly led by Uttar Pradesh, followed by West Bengal and Bihar, thriving on the same alluvial soil and cool winter conditions that suit wheat. Tobacco needs a warm climate and well-drained sandy loam soil, and is concentrated in Andhra Pradesh (the Guntur belt, India's largest tobacco-growing tract) and Gujarat. Banana, India's single largest fruit crop by production volume, is led by Maharashtra, Tamil Nadu, Gujarat, and Andhra Pradesh, needing a hot, humid, frost-free climate year-round. Mango, sometimes called the "king of fruits" and closely associated with Indian cultural identity, is led by Uttar Pradesh (particularly the Malihabad belt near Lucknow, famous for the Dussehri and Langra varieties), followed by Andhra Pradesh and Karnataka. Cashew, a laterite-soil plantation crop, is concentrated along the west coast (Maharashtra, Goa, Karnataka, Kerala) and the east coast in Odisha and Andhra Pradesh. Areca nut (supari), another laterite/coastal crop, is led by Karnataka (particularly the Malnad region) and Kerala.

Horticulture as a whole (fruits, vegetables, spices, flowers, plantation crops taken together) has grown to exceed total foodgrain production by value in recent years — a structural shift frequently tested as "India's horticulture output has overtaken foodgrain output," reflecting both rising domestic demand for fruits and vegetables and government promotion through the National Horticulture Mission (now folded into the Mission for Integrated Development of Horticulture, MIDH).

Memory hook (the "king and queen" pair): "Mango is the king of fruits (UP's Malihabad belt), cardamom is the queen of spices (Kerala's Idukki hills)." Two royal titles, two crops, never confused.

Memory hook (potato's odd status): "Potato behaves like a grain but grows like a Rabi vegetable" — grown in the cool winter like wheat, on the same UP/Bihar/Bengal alluvium, but counted separately from foodgrains in most statistics.

Plantation Crops as a Family — Why They Cluster Where They Do

Stepping back, it is worth noticing what tea, coffee, rubber, cashew, and areca nut all have in common, since exam questions frequently test "which of these is a plantation crop" as a category question rather than asking about any one crop individually. All five share three structural traits distinct from foodgrains: they are perennial (planted once, harvested repeatedly over years or decades, rather than sown and harvested within a single season); they require a large capital investment with a long gestation period before the first commercial harvest (a new tea bush or rubber tree can take three to seven years to mature); and they are grown predominantly on large, organised estates historically established under colonial-era investment (particularly tea in Assam and coffee in Karnataka, both substantially developed under British planters in the 19th century), a labour and land-holding structure that still distinguishes plantation agriculture from India's overwhelmingly small-and-marginal-holding foodgrain sector described in the Agricultural Census section. This is also precisely why plantation crops cluster so tightly by state — Assam for tea, Karnataka for coffee, Kerala for rubber — compared to a staple like rice or wheat, which spreads across a dozen or more states: the fixed estate infrastructure and multi-year gestation period make plantation agriculture far less mobile or substitutable across regions than annual field crops.

Memory hook (soil-to-crop pairing, the exam's favourite trap): "Black wears Cotton, Alluvial grows Rice and Wheat, Laterite sips Tea and Coffee and Rubber, Red scatters Groundnut and Millets." Four soils, four crop families — the pairing questions almost always test exactly this grid.

Memory hook (state-crop chains, five worked examples to copy the pattern from):

  • Rice: "Bengal cooks it first, UP serves seconds, Punjab pours the last bowl" (West Bengal → UP → Punjab).
  • Wheat: "UP grows the most, MP grinds close behind, Punjab and Haryana eat it fastest (highest yield)" (UP → MP → Punjab/Haryana).
  • Cotton: "Gujarat's shirt, Maharashtra's thread, Telangana's button" (Gujarat → Maharashtra → Telangana).
  • Sugarcane: "UP's cane grows tallest, Maharashtra's mill grinds sweetest" (UP → Maharashtra → Karnataka).
  • Tea: "Assam pours half the cup, Bengal's Darjeeling perfumes it, Tamil Nadu's Nilgiris cool it" (Assam → West Bengal → Tamil Nadu).

Practice Recall: Before reading on, name the ideal soil type and top three producing states for cotton, and explain in one sentence why that soil suits it.

Answer: Black/regur soil; Gujarat, Maharashtra, Telangana (approx.). Black soil's high clay content retains moisture exceptionally well, letting cotton survive dry spells during its long, sunshine-dependent growing and picking period.

Practice Recall: Before reading on, name which single state dominates jute, tea (Assam-type), coffee, and rubber production respectively, and note which two of these four are laterite-soil crops.

Answer: Jute — West Bengal. Tea — Assam. Coffee — Karnataka. Rubber — Kerala. Coffee and rubber (and tea, more loosely) are the laterite/hill-loam crops among these.
